alfajores de dulce de leche
Argentina · Latin America

Alfajores de dulce de leche are sandwich biscuits filled with dulce de leche. Paulina Cocina’s marplatense version, learned from Matías Chavero, uses a dough of butter, sugar, egg, self-raising flour, corn starch, cocoa and vanilla. The chilled dough is rolled and cut into round biscuits, which are baked and cooled.[1]
Dulce de leche is placed between pairs of biscuits. The assembled alfajores are coated in chocolate and left to cool. This chocolate-covered marplatense preparation is one form of the filled sweet; the author also points readers towards corn-starch alfajores.[1]
