Wiener Schnitzel

Wiener Schnitzel is a Viennese breaded veal cutlet fried until golden. The veal is pounded thin and seasoned, then coated in flour, beaten egg and breadcrumbs. Renate Wagner’s recipe fries it in clarified butter or vegetable oil and turns it to brown both sides.[1]

The cutlet is served with lemon slices. Parsley potatoes, potato salad, rice or a mixed salad are among its accompaniments. The name Wiener Schnitzel specifically refers to the veal preparation, although the recipe also lists pork or turkey as alternatives.[1]
