Axoa
France · Europe

Axoa is a traditional Basque dish made with finely cut or minced veal. The meat simmers with onions and sweet peppers, sometimes including bell peppers, and is seasoned with Espelette pepper. Beef versions are also made.[1]
Potatoes and rice are common accompaniments. The dish is also served during festivities in the Basque Country.[1]
