Qutab with greens
Azerbaijan · Middle East and North Africa

Qutab is made from a thin layer of dough folded around a filling into a crescent. Baku Food Tours describes dough made with flour, water, eggs and salt, cooked on both sides on a flat pan called a saj. The greens-filled type is called göy qutab; other fillings include meat or pumpkin.[1]
The Baku guide describes qutab served with butter, sumac and yogurt. Fillings and sizes vary regionally: it contrasts greens qutab with the small camel-meat qutab served in Jorat.[1]
