Cracked conch

Cracked conch is a Bahamian dish of tenderised conch meat coated and fried. The Bahamas tourism ministry describes pounding the marine mollusc’s meat before seasoning, coating it in flour and deep-frying. Fries and sauces such as ketchup, hot sauce or mayonnaise accompany it.[1]

Nassau Paradise Island’s recipe gives the conch a breadcrumb coating. Each piece is dusted with flour, dipped in beaten egg mixed with water, then covered in panko crumbs. The pieces are fried until golden and drained. Its dipping sauce combines ketchup and mayonnaise with a little mustard.[2]
