In Belgium, a praline is a filled chocolate confection. Fillings include chocolate ganache, hazelnut praliné, caramel and flavoured creams. Dark, milk and white chocolate coatings are used. Some chocolates combine several layers, such as raspberry ganache over a nut filling, or a crisp nougatine shell filled with cream and coated in chocolate.[2]
Neuhaus traces its Belgian praline to Jean Neuhaus Junior in Brussels in 1912. The family’s account also associates the ballotin, a protective presentation box for chocolates, with Louise Agostini in 1915.[1][2]
