Speculoos

Speculoos are sweet biscuits made with brown sugar and spices. Maison Dandoy’s recipe uses flour, butter, dark brown sugar, water, salt and bicarbonate of soda, with cinnamon and ground cloves. The butter, sugar and spices are beaten together, then the remaining ingredients are worked into a thick dough.[1]

The dough is pressed into a flour-dusted biscuit mould and released onto a greased baking tray. Without a mould, it can be rolled thinner and cut into shapes with a knife or cutter before baking. The recipe notes that a paler brown sugar produces paler biscuits.[1]
