Waterzooi is a soup associated with Ghent, made with chicken or fish. The chicken preparation described by Visit Gent includes carrots, leek, celery, potatoes and cream. White wine or an egg yolk may be added, but neither is required.[1]

A fish version in the city’s culinary booklet combines an assortment of North Sea fish with seasonal vegetables, white wine, stock and water. The ingredients are cut into small pieces and simmered together. Eggs and cream may be used to thicken this version before serving.[2]
