blini with sour cream and caviar
Russia · Europe

Blini are pancakes served with sweet or savoury accompaniments. Nina Laptev’s SBS recipe lists caviar and sour cream among the savoury choices. Her batter starts with yeast dissolved in warm water, then incorporates sugar, salt, eggs and wheat flour. Melted butter joins the batter before its first rise.[1]
Nearly boiling milk is whisked into the risen mixture, which rests again until it expands. Small portions cook in a greased pan: bubbles appear and burst on the surface before the pancakes are turned. The second side cooks until golden and risen. The recipe also suggests salmon or herring, and sweet alternatives of jam or honey.[1]
