Butter tarts are small pastry cases filled with a sweet butter mixture. Anna Olson’s version combines dark brown sugar, maple syrup, melted butter, eggs, vinegar and vanilla. Raisins, pecans or walnut pieces can be added, or the filling left plain.[1]

The pastry contains flour, sugar, salt, oil, butter, water and vinegar or lemon juice. It is chilled, divided and rolled into circles to line a muffin tin. The additions go into the cases before the filling. The tarts bake until the filling rises into a dome, then cool and chill in the tin before removal.[1]
