Calgary ginger beef

Calgary ginger beef combines battered beef strips with a sweet, savoury chilli sauce. The coating gives the beef a crisp texture before it is covered in sauce. Travel Alberta identifies the dish with Calgary and describes it as a familiar restaurant offering in the city.[1]
The provincial tourism authority attributes its development to George Wong at the Silver Inn in the 1970s. Its account describes Wong adapting a dish he had prepared while working in a British pub after moving from Hong Kong to Calgary. The Silver Inn closed in 2022, but ginger beef remained part of the city’s restaurant food.[1]
