Pastel com Diablo Dentro

Pastel com diabo dentro is a Cape Verdean fried pastry with a tuna and chilli filling. Alégrím’s home preparation makes the dough from boiled, mashed sweet potato and maize flour, adding a little reserved cooking water. The filling combines tuna with onion, tomato, olive oil, chilli and citrus juice; either fresh or canned tuna can be used.[1]

The dough is flattened on a damp cloth, filled and folded closed with the cloth’s help before frying in hot oil. The author describes a personal version with thicker dough and less filling, and uses a milder chilli with its seeds removed.[1]
