Daraba Vegetable Stew

Daraba is a Chadian vegetable stew with okra and peanuts. Johanna’s home-cooked version combines okra, tomato, sweet potato and aubergine in water seasoned with a stock cube. The vegetables simmer until nearly cooked.[1]

Peanut butter is mixed with some of the cooking liquid before being returned to the pot, where the sauce continues simmering and thickens. Leafy greens are added near the end and cooked until wilted. Salt, pepper and cayenne season the stew.[1]
