A molded strawberry dessert with ladyfinger sides and strawberries on top.
Charlotte aux fraises

Charlotte aux fraises is a chilled strawberry dessert shaped in a biscuit-lined mould. Philippe Laruelle’s version combines whipped cream, mascarpone and icing sugar with strawberry purée set with gelatine. Some berries are blended into the purée and others cut into small pieces for the filling.[1]

Ladyfinger biscuits line the sides of the mould, with the remaining biscuits crumbled over its base. The strawberry cream fills the centre and is smoothed on top, then decorated with whole strawberries and mint before chilling.[1]
