Cheung fun

Cheung fun consists of thin rice-noodle sheets rolled around fillings or served as rolls. It appears in dim sum in several forms, including shrimp and beef fillings, dried shrimp with spring onions, and zha leung, in which the noodle surrounds a fried dough stick. The soft outer sheet contrasts with the crisp dough in zha leung.[1]

Bill Leung’s homemade noodle sheets use rice flour with tapioca and wheat starches, water and a little oil. The batter is spread thinly in a greased pan and steamed until set. For one version, he scatters cooked dried shrimp and spring onions over the sheet before rolling it; for zha leung, he wraps the sheet around a reheated dough stick. His accompanying sauce combines dark soy sauce, oyster sauce and sugar diluted with water.[1]
