jianbing guozi
China · East Asia

Jianbing guozi is a thin savoury pancake folded around a crisp fried filling and sauces. Elaine of China Sichuan Food presents a home preparation of this street breakfast using a batter of wheat flour, corn flour and water. An egg is spread over the pancake as it sets, with sesame seeds added before it is turned over.[1]
Her filling uses fried wonton wrappers as bao cui, the crisp component, alongside lettuce and chopped zha cai preserved mustard stems. Sausage is an optional addition. A cooked sauce combines soybean paste, chilli-bean paste, sweet bean paste, peanut butter, oyster sauce and sesame oil. The pancake is brushed with the sauce, filled and rolled, then cut into halves for serving. These are the ingredients of her simplified home version, rather than a single formula for every vendor’s pancake.[1]
