Poulet à la Moambé
Democratic Republic of the Congo · Sub-Saharan Africa

Poulet à la moambé is chicken cooked in a palm-fruit sauce. A family recipe by Jean Tabuku, recorded by K Emilio Noorani in the Democratic Republic of the Congo, browns seasoned chicken pieces separately. The sauce is made from cooked palm fruits, pounded and mixed with warm water before the liquid is strained.[1]
Tabuku reduces the extracted palm liquid with onion, garlic and bay leaves, then adds the chicken. Some oil that rises to the surface is reserved for a separate preparation of cooked cassava leaves. The family serves the chicken with rice, the cassava leaves, fried ripe plantains and pili-pili.[1]
