Bowl of chunky cabbage, bean, and vegetable soup with a spoon.
Garbure béarnaise

Béarnaise garbure is a vegetable soup with white beans, ham and duck confit. The tourism office’s recipe includes green cabbage, carrots, turnips and potatoes, with onion, garlic, celery and thyme. The beans are soaked before cooking.[1]

Onion and garlic are softened in duck fat before water, vegetables, beans and ham are added. The soup simmers slowly, with excess fat skimmed from the surface. Duck confit goes in near the end and is heated through before pieces are distributed among the bowls.[1]
