Pissaladière
France · Europe

Pissaladière is a Nice speciality of bread dough topped with onions, anchovies and black olives. The local tourism office’s recipe cooks thinly sliced onions slowly in olive oil with garlic, thyme, bay and rosemary. The onions soften without browning; the garlic and herbs are removed before the topping is assembled.[1]
A risen yeast dough enriched with olive oil is spread in an oiled tin or on a baking tray. The cooked onions cover the dough, with anchovy fillets and Nice black olives arranged above them. The pissaladière is baked and served warm or cold.[1]
