Fish with Odika Sauce

Odika is an ingredient used to give substance to sauces for fish and other foods in Gabon. Gastronomie Gabonaise describes the kernels of Irvingia gabonensis being dried, roasted and ground, then kept in a block that can be grated into sauces, broths or wrapped preparations.[1]

Chef Malax’s fish preparation combines odika powder with pieces of mâchoiron, sorrel, tomato, onion, garlic and palm oil. The ingredients are enclosed in foil or banana leaves and cooked as a parcel, with oven, steam and charcoal methods given as alternatives. The chef suggests steamed plantain or cassava as an accompaniment.[2]
