Poulet nyembwe
Gabon · Sub-Saharan Africa

Poulet nyembwe combines chicken with a sauce extracted from palm fruits. Camerdish’s Gabonese preparation uses smoked chicken, sorrel leaves, onion, garlic, dried crayfish powder and optional chilli. Its sauce begins with palm fruits that are cooked, pounded and mixed with water before the liquid is strained into a pot.[1]
The strained palm mixture is simmered with onion and garlic. The chicken is lightly browned separately, then added with the crayfish powder and chopped sorrel. As cooking continues, the sauce becomes thicker and oil rises to its surface.[1]
