Rheinischer Sauerbraten

Rheinischer Sauerbraten is a marinated pot roast from the Rhineland, served with a raisin sauce. A regional tourism recipe uses beef leg marinated in white-wine vinegar with onion, carrots, bay leaf, peppercorns and juniper berries.[1]

The drained meat is browned in clarified butter and braised with some marinade and vegetables. The cooking liquid is puréed, raisins are added, and a butter-and-flour roux thickens the sauce. The roast is sliced and served with the sauce; potato dumplings are a classic accompaniment.[1]
