Ghanaian jollof rice
Ghana · Sub-Saharan Africa

Ghanaian jollof is a preparation of rice cooked in a seasoned tomato sauce. Rice varieties and seasonings differ between cooks. In Fafa Gilbert’s mutton version, aged basmati is used, with jasmine or another long-grain rice offered as alternatives. Mutton stock supplies some of the cooking liquid, and nutmeg or mace and bay leaves season the rice.[1]
The tomato sauce is prepared before the rice is added. The grains are cooked in the sauce, then stock and some of the cooked mutton are added and the pot is covered for steaming. Coconut oil is stirred into the rice at the end. The remaining meat is served with additional tomato sauce, with side dishes such as fried plantain or a fresh salad.[1]
