Barley rusks topped with tomato, white cheese, capers, olive oil, and herbs.
Dakos

Dakos is a Cretan dish of barley rusks with tomato, soft white cheese and olive oil. Alex Mylonas’s recipe briefly wets the rusks, then tops them with grated tomato, crumbled xinomizithra, feta or galomizithra, olives or olive paste, and oregano. Capers or kritamo are optional additions.[1]

The rusks can also be broken up and mixed into a salad. WWF Greece’s recipe uses chopped tomatoes and olive oil to soak the rusk pieces, then adds feta or another soft white cheese and dried oregano. The crisp bread softens as it absorbs the tomato juices and oil.[1][2]
