Caldo de mancarra

Caldo de mancarra is a Guinea-Bissauan peanut sauce served with rice and meat or chicken. Filomena Diouf Correia’s recipe cooks pieces of beef or chicken with onion, stock seasoning, lemon juice and peeled tomato. Peanut butter is diluted separately in salted boiling water and gently cooked with stirring until oil rises to the surface.[1]

The peanut sauce is poured into the meat pot and simmered further. Okra is cooked separately so it keeps its shape, then added last. Correia serves the dish with white rice, preferring Carolino rice, and leaves chilli for diners to add to their plates.[1]
