Kolkata Kati Roll
India · South Asia

A Kolkata kati roll wraps skewered kebabs in a flaky fried paratha with onions, chilli and citrus. Bong Eats’ chicken version marinates thigh pieces with yogurt, ginger, garlic, lime, mustard oil and spices. Charcoal smoke flavours the marinade before the chicken is threaded onto skewers and roasted in an oven.[1]
The kebabs are then stir-fried with onions and bell pepper. The slightly sweet wheat dough is shaped into layers and fried as a paratha; an egg coating is optional for an egg-chicken roll. Chicken, fresh onion, green chilli, lime and chaat masala fill the hot bread, which is rolled tightly and partly wrapped in paper.[1]
