Soft bread roll filled with two golden potato fritters and chutney.
vada pav

Vada pav is a Mumbai street snack of a spiced potato fritter inside a soft bread roll. In Dassana Amit’s preparation, boiled mashed potato receives mustard seeds, curry leaves, asafoetida, crushed garlic, green chilli and turmeric heated in oil, followed by chopped coriander. The mixture is shaped into slightly flattened balls, coated in gram-flour batter and deep-fried until golden.[1]

The pav is split without separating the halves and spread with green and sweet tamarind chutneys. Dry garlic chutney is optional, and the hot potato vada is placed between the bread slices. Fried salted green chillies can accompany it. It is served immediately, as the filled bread absorbs moisture and becomes soggy.[1]
