Ayam taliwang

Ayam taliwang is a spicy chicken dish associated with Lombok in West Nusa Tenggara. Grilled chicken is seasoned with a mixture that can include dried red chili, shallots, garlic, tomato, kencur, shrimp paste, palm sugar and salt. Kencur is an aromatic rhizome used in the seasoning. A version described by the provincial tourism office can be grilled or fried.[1][2]

The chicken is commonly served with warm rice and plecing kangkung, a side dish of boiled water spinach with spicy sambal. The sambal may include chili, tomato, shrimp paste and lime juice. This pairing places the strongly seasoned chicken alongside a vegetable accompaniment, and appears in the provincial tourism office’s account of Lombok cooking.[2]
