Satay / sate ayam

Sate ayam is chicken threaded onto skewers and cooked, often accompanied by a sauce. Marvellina’s peanut-sauce version is inspired by Sate Khas Senayan. She uses boneless chicken thighs, marinated with red onion, garlic, galangal, ground coriander, candlenuts, makrut lime leaves, coconut or brown sugar, white pepper, salt and sweet soy sauce.[1]

The chicken strips are woven onto skewers and grilled, baked or cooked in a pan. Her sauce combines peanut butter with onion, garlic, optional chilli, makrut lime leaves, water, sugar, salt and sweet soy sauce. It is simmered, then chopped roasted peanuts are stirred in. The skewers are served with the sauce, extra sweet soy sauce and crispy fried shallots.[1]
