Spiced chicken soup with rice cake, crackers, egg, and fried shallots.
Soto Banjar

Soto Banjar is a spiced chicken soup associated with Banjarmasin in Kalimantan. Endang Lestari cooks the chicken with cinnamon, green cardamom, cloves, star anise, aniseed and nutmeg. A separate paste of shallots, garlic, ginger and pepper is fried before being added to the strained broth. The chicken is shredded and returned to the soup, with spring onion and celery added last.[1]

The soup is served over ketupat rice cakes, glass noodles and boiled egg, with potato fritters and fried shallots. Lime juice is optional, and the chilli sauce is served separately. Lestari describes both enclosing the whole spices in cloth and cooking them loose before straining the broth.[1]
