Schnitzel in Pita
Israel · Middle East and North Africa

Chicken schnitzel can be stuffed into pita with hummus and salad, as Jamie Geller suggests in her recipe. Chef Tamar Cohen Tzedek describes her preferred pita serving with hummus and pickles. The bread encloses the fried cutlet and its accompaniments as a sandwich.[1][2]
Geller’s schnitzel uses chicken breast pounded thin and coated successively in seasoned flour, egg white and panko. Dried thyme and lemon zest flavour the crumbs, and the chicken is fried in olive oil on both sides. Her accompanying salad combines diced cucumber and tomato with parsley, lemon juice and olive oil; tahini is served for dipping or drizzling.[1]
