Panelle

Panelle are made from chickpea flour cooked with water into a smooth paste. The Sicilian regional recipe seasons it with salt and chopped parsley, with fennel seeds as another option. The paste is spread thinly in oiled moulds, cooled and cut into rectangles.[1]

The pieces are fried in oil or lard and put into bread with salt, pepper and a few drops of lemon juice. Smaller pieces also appear among hot starters, often alongside crocchè, the fried potato croquettes also called cazzilli.[1]
