Spaghetti alla carbonara

Italy · Europe

Plate of spaghetti in a pale cheese-and-egg sauce with black pepper and pieces of cured pork.
Spaghetti alla carbonara

Spaghetti alla carbonara combines pasta with guanciale, eggs, Pecorino Romano and black pepper. Sonia Peronaci browns guanciale in a pan without added fat and reserves the fat it releases. Whole eggs and extra yolks are whisked with grated Pecorino, pepper and some of that fat.[1]

Her method gently warms the egg mixture over a water bath. The bowl is then removed from the bath before the guanciale and hot spaghetti are mixed in. Reserved pasta water loosens the sauce when needed, and more pepper finishes the dish.[1]
