Jerk chicken

Jerk chicken combines Jamaican jerk seasoning with a smoky cooking method. Pimento, also called allspice, Scotch bonnet, thyme, scallion, onion and garlic are common elements of the seasoning. The chicken is marinated before cooking, with recipes varying in their additional spices.[1][2]

Jerk can be cooked over charcoal in a reused metal drum known as a jerk pan, or over pimento wood. At some jerk centres the meat is covered while cooking. Festival, a sweet fried dough, roasted breadfruit, cassava cakes or rice and peas can accompany the chicken.[1][2]
