Dorayaki
Japan · East Asia

Dorayaki usually encloses anko, sweet azuki-bean paste, between soft pancakes. Other fillings include custard, chestnuts and creams flavoured with matcha or combined with fruit. The pancakes have a smooth golden-brown surface and a moist texture, and the confection is eaten as a snack or dessert.[1]
Namiko Hirasawa Chen’s batter combines eggs, sugar and honey with flour and baking powder. It rests before a little water is added to adjust its consistency. Excess oil is wiped from the pan to help the pancakes brown evenly. More bean paste is placed in the centre than at the edges, giving the assembled sandwich a rounded profile.[1]
