Nagasaki Champon
Japan · East Asia

Nagasaki champon combines chewy noodles with pork, fish cake, cabbage, bean sprouts and seafood such as squid or prawns. The ingredients are stir-fried before soup is added, and the noodles are then simmered with them. Seasonal shellfish can include clams in summer or oysters in winter.[1]
An origin account connects the dish to Chin Heijun of the Shikairo restaurant in 1899, who prepared an inexpensive meal for Chinese students. Champon became a home dish in Nagasaki as well as a restaurant speciality. Nagasaki-style broth is rich in pork flavour, while the Obama version from the same prefecture uses a lighter chicken stock.[1]
