Nagasaki Sara Udon

Nagasaki sara udon is a plate of fried noodles topped with seafood, meat and vegetables in a thickened sauce. Thin, crisp noodles and thicker pan-fried noodles are both used in Nagasaki. Cabbage, bean sprouts, pork, shrimp and squid are among the possible toppings. The sauce coats the noodles and softens their crisp surface.[1][2]

Namiko Hirasawa Chen’s home version uses pork belly, shrimp, squid, fish cake, mushrooms and vegetables, with chicken stock, oyster sauce, soy sauce and sugar. A potato-starch or cornstarch slurry thickens the topping before it is poured over the noodles. Karashi mustard and rice vinegar are optional finishing seasonings.[2]
