Taiyaki

Taiyaki is a Japanese fish-shaped cake commonly filled with sweet red-bean paste. Its mould resembles a sea bream, with a patterned body and tail. Custard, chocolate and cheese are other fillings found in these cakes, which are sold at specialist shops and festival stalls.[1]

Namiko Hirasawa Chen’s home batter combines cake flour, baking powder, baking soda, egg, milk and sugar. Batter is poured into an oiled fish-shaped mould, the filling is placed in the centre and more batter covers it. The closed mould is turned during cooking so both sides brown.[1]
