Tokushima Ramen

Tokushima ramen is a regional noodle soup from eastern Tokushima, often topped with seasoned pork belly. Sweet-savoury simmered pork, bean sprouts and egg are familiar toppings. The broth is commonly grouped into brown, yellow and white styles, with different stocks and soy sauces producing distinct colours and flavours.[1]

Brown broth uses pork bones with dark soy sauce or tamari. Yellow broth adds chicken bones and vegetables to pork stock and uses light-coloured soy sauce. White broth uses pork stock seasoned with light-coloured or white soy sauce. The tourism organisation describes raw egg as one possible topping; it is not part of every bowl.[1]
