Tori karaage is Japanese fried chicken made from small pieces coated in flour or starch. Karaage names a frying method that can also be used for other meats or vegetables. Chicken karaage appears as an izakaya dish, in bento lunches and in home cooking.[1]

Namiko Hirasawa Chen’s preparation uses boneless chicken thighs marinated with ginger, garlic, soy sauce, sake and sesame oil. Flour and potato starch form the coating. The chicken is fried twice, with the second frying at a higher temperature. Lemon wedges, mayonnaise or shichimi togarashi are optional accompaniments.[1]
