Ugali with sukuma wiki pairs a firm maize-meal preparation with cooked leafy greens. For ugali, maize meal is stirred into boiling water until it forms a dense mass that can be shaped into a mound. Sukuma wiki uses greens such as collards, cut into thin strips and cooked with onion and tomato. Other seasonings vary with the recipe.[1][2]
The combination is eaten in Kenya and elsewhere in East Africa. Sukuma wiki translates as “push the week” in Swahili. Meat or beans may be added to the greens, and pieces of ugali can be used by hand to scoop them up.[2]
