coconut fish

Kiribati fish preparations can keep the fish and coconut sauce separate. The Pacific Community’s Pasifika Plates presents fresh Kiribati ika as white-fish fillets steamed in banana leaves with ginger, chilli and spring onion. The cooked fish is placed over greens stir-fried with garlic, honey and soy sauce.[1]

The same recipe spread records coconut miti, a sauce of fresh coconut cream, coconut water, onion, tomato, cucumber, chilli, spring onion and citrus juice. Its ingredients are mixed together and served with vegetables.[1]
