Nam khao

Nam khao is a Lao salad of crumbled crisp fried rice mixed with soured pork, herbs and peanuts. Cooked jasmine rice is seasoned, shaped and fried before being broken into pieces for the salad. Saeng Douangdara’s version mixes the cooled rice with egg, red curry paste, sugar, unsweetened shredded coconut and chopped lime leaves. After frying, the rice is crumbled and dressed with fish sauce and lime juice.[1]

Som moo soured pork, pork skin, coriander, spring onion and roasted peanuts are mixed through the rice. The salad can be spooned into lettuce leaves with extra herbs and fried chilli. Douangdara describes it as a dish brought to Lao celebrations and gatherings; his serving suggestions also include minced banana blossom when available.[1]
