Grey peas with bacon is a dish of boiled peas, pork and onions. Latvia’s tourism authority associates the dish with Christmas meals and describes bacon or smoked pork among its toppings. The peas are soaked before boiling; they are served whole rather than mashed in this preparation.[1][2]
The recipe in a school presentation on Latvian foods soaks the peas overnight, rinses them and boils them in fresh water until soft. Chopped bacon and onion fry separately while the peas cook. They are combined in a bowl, with kefir suggested alongside.[2]
