Papa with moroho

Papa with moroho combines thick porridge with a vegetable accompaniment. The Peace Corps’ account of meals in Lesotho identifies papa as cornmeal porridge and moroho as vegetables, especially cabbage or Swiss chard. Meat may accompany the pair, with beef, pork, mutton and chicken among the examples it gives.[1]

A Lesotho home-gardening poster commissioned by FAO and the Ministry of Agriculture and Food Security describes a preparation using cereal flour and water stirred together and cooked over low heat until thick. It offers maize, sorghum or wheat flour as choices. Its moroho recipe uses chopped greens cooked with oil and salt; spinach, amaranth and other cultivated or indigenous vegetables are among the options. Beans, eggs or meat can be served alongside the porridge and greens.[2]
