Couscous bil-bosla

Couscous bil bosla is a Libyan couscous preparation with an onion topping. Umm Obaidah’s home recipe makes a sauce of meat, chopped onion, tomato paste, cayenne and turmeric. Lamb, beef or chicken can be used. Sliced onions are steamed above the sauce, with cooked chickpeas added as the onions soften.[1]

The steamed onions are mixed with melted ghee, some of the meat sauce and cinnamon. Couscous is first moistened with hot stock and fluffed, then steamed above the sauce pot. It is loosened again after cooking and sprinkled with allspice. The onions are cooked until tender while retaining their shape.[1]
