satay Kajang

Satay Kajang is a style of grilled meat skewer associated with the Malaysian town of Kajang. In Jackie M’s chicken version, thigh fillets are seasoned with turmeric, cumin, onion, lemongrass, galangal, garlic, sugar and salt. She describes brushing the skewers with oil using a bruised lemongrass stalk while they cook over charcoal.[1]

Her peanut sauce combines crushed roasted peanuts with tamarind, lemongrass, garlic, sugar and fried onion or shallots. She distinguishes her preparation from the Grand Hyatt Kuala Lumpur version, which also uses minced dried prawns in the chicken recipe.[1]
