Marshallese Coconut Fish

Coconut fish pairs fish with a sauce based on coconut cream. Q Zine’s cooking account for a Marshall Islands meal uses monkfish, with onion, chilli, lemon juice and cornflour in the sauce. The sauce is prepared separately before it is combined with the fish.[1]

In this home adaptation, the fish is coated in seasoned flour and browned in a pan. It is then placed in a baking dish with sliced tomato and the coconut sauce, and finished in the oven. The cooks served it with steamed rice and salads.[1]
