Plate of stir-fried noodles with vegetables, rice, sauce, and a grilled fish side.
mine frit

Mine frit is a Mauritian stir-fried noodle dish. Mauritian Food Recipes’ home version uses egg noodles, chicken, Chinese sausage, cabbage, carrot, bean sprouts and garlic chives. Soy and oyster sauces, Shaoxing wine, sesame oil and fish sauce season the dish. An omelette is cooked separately and cut into strips.[1]

The chicken is marinated and stir-fried before the noodles are prepared. Vegetables and sausage cook in the wok, followed by noodles and sauce. Chicken, chives and bean sprouts are mixed in towards the end. Strips of omelette finish the bowl, with garlic and chilli sauces alongside. The authors also suggest replacing the meat with prawns or leaving it out.[1]
