Carne en su jugo

Carne en su jugo is a Jalisco beef dish served in broth with beans and garnishes. Mely Martínez notes versions with and without tomatillos. Her preparation seasons finely diced beef with soy sauce, lime juice and black pepper, then cooks it in fat rendered from bacon.[1]

Garlic, spring onion, coriander and serrano chilli are blended with broth; tomatillos are optional. This mixture and more broth simmer with the beef. The meat and liquid are ladled over warm cooked pinto beans, with garnishes such as crisp bacon, onion, coriander, radish and lime.[1]
